La.Pi.S: hip to be square

at last i'm able to join the lasang pinoy sundays. it's been quite a while that i've been reading through/scanning the entries for their weekly theme and it's so inspirational.

here's my take on this week's theme: hip to be square. just like miss ces, i'm also a fan of anything square specially when it comes to plates, saucers, cups, or just anything for the kitchen. but for now, i only have a couple of this square small plate/saucer which i got at ikea in dubai. i really love it and i hope to buy more 4-angled stuff for my kitchen. my husband's not allowing me to purchase some more since we already have plates and we don't have anymore place to store extras. hehehe...

along with my favorite square plate is a square-cut chocolate fudge brownies i baked last weekend. i loved putting a scoop or two of any vanilla ice cream on top of my brownies, it's just a perfect pair for me. first is that i heat my brownies in the microwave for a few seconds; then top a scoop of a very cold vanilla ice... mmmmm... yummy... hehehe... (but i just have to limit my sugar intake since i'm pregnant and about to take my sugar-glucose test next month :p).

i got the chocolate fudge brownies recipe from miss connie veneracion's foodblog, just made a few substitutions, depending on the availability of the ingredients in my kitchen. i don't know the effect on the finished product when i substituted pancake syrup with honey... (i just thought that pancake syrup's for pancake and honey can also be used in pancake) but it still came out nicely for a first timer and it taste like brownies. my husband and son really loves it since it's not too sweet.

ingredients:
3 eggs
3/4 cup all-purpose flour
1-1/2 cup white sugar
3/4 cup butter
3/4 cup cocoa
1/4 cup honey
3 tbsp. corn oil
1/2 cup chopped cashew nuts
1 small bar milk chocolate with crispies, chopped coarsely

procedure:
preheat the oven to 350of. grease a 9″x6″ cake pan.

in a large bowl, beat the eggs until light in color. add the flour and sugar and mix until blended.

over low heat, melt the butter then stir in the cocoa, honey and corn oil. cool for a few minutes. stir into the flour mixture until well blended. fold in the chopped cashew nuts. pour into the greased pan, top with the chopped milk chocolate bar and bake for 25-30 minutes or just until a toothpick inserted at the center comes out clean. do not over bake.

cool before cutting. for best results, cool to room temperature then chill in the fridge for a couple of hours before slicing.

You are right when you stressed DO NOT OVER BAKE.I always learn from this mistake.
