potato omelet

i always have eggs for breakfast these days and i was wondering what egg dish should i prepare today since i’ve been having scrambled eggs, sunny-side-up eggs in the past days. i remembered frema preparing this egg dish with potato slices and i thought of making it for this day.


i just grated the potato instead of slicing. then i squeezed out as many juice as possible not to make my omelet soggy. i scrambled 2 eggs and season with salt and pepper. then heat oil in the pan and cooked the scrambled eggs just like i used to. when it started to settle, i added the squeezed grated potato on the top of the scrambled eggs. seasoned with salt and pepper. using a plate, i inverted it on top of the pan and inverted again the pan to put the omelet on the plate. then slowly, i slide the omelet on to the pan to cook the other side (the side with the grated potato). i cooked it for 1-2 minutes.
