stir-fried pork with sweet chili sauce

i prepared this dish for our lunch while we were still in jabal house. i found this recipe in a magazine a few years ago. i just revised it using the ingredients i found at home and i added corn kernel.



ingredients:
1/2 kl. pork belly, sliced into1/4" thick

for the marinade:
1 tbsp. cooking oil
2 sachets (6gm) garlic seasoning mix
1 tsp. pepper powder
1-1/2 tsp. soy sauce

for the sauce:
2 tbsp. cooking oil
1/2 tbsp. garlic, minced
1/2 onion, sliced
1/2 red bell pepper, sliced
1/2 green bell pepper, sliced
1 medium carrot, julienned
1 can (200g) corn kernel
1/4 c. sweet and chili sauce
salt and pepper to taste

directions:
mix all ingredients for the marinade and add the mixture to the pork belly slices. let stand for 15 minutes for the flavor to be absorbed.

heat oil and saute garlic and onion until soft. add the bell peppers and carrots and cook through. remove from the pan and set aside.

put in the marinated pork belly slices into the pan and cook well. pour in the sweet chilli sauce.

toss in the cooked bell peppers, carrots, garlic and onions. add the corn kernels. season to taste. cook over low heat for another minute.

serve hot.
