vegetable medley

i found this recipe from an old magazine i cut when i was still in cebu. the first time i tried this dish, i was still single. hehehe... really long time ago. then the i tried it again just early this year when we were still at the old house (al jabal house).

you can add or use other vegetables here as well as fish, pork, beef or chicken: just saute the meat before adding the rice washing. i used rice washing since it is also nutritious and to make it tastier. just use the 2nd or 3rd washing. i intended not to add any meat since i just wanted a soup to pair it with the dried fish we had for dinner. the cream of corn even made it tastier.



ingredients:
4 cups rice washing, 2nd washing
1 pc. pork cube
1 medium onion, sliced
1 medium tomato, sliced
1 tbsp. ginger, sliced
2 cups kalabasa, cut into cubes
2 medium eggplant, sliced
1 medium upo, sliced into cubes
2 cups baguio beans, sliced into 1-1/2" length
1 cup cream of corn
1 cup malunggay leaves
salt and pepper


directions:
in a pot, boil rice washing with the pork cube and ginger. when the liquid boils, add the onion and tomato.

add the kalabasa. when the kalabasa i half-cooked, add the rest of the vegetables, eggplant, upo, baguio beans. add the cream of corn and season with salt and pepper. continue simmering until cooked.

turn off the stove and add the malunggay leaves before serving.
