macaroni fruit salad

we have always been enjoying fruit salads and we always see to it that we have some in the refrigerator. so that everytime we wanted to have some dessert or snack, there'll always be a bowl ready to enjoy.

everytime we go for a grocery at carrefour, i always make sure i grab this biscocho... so perfect for my macaroni fruit salad. i always enjoy my biscocho with warm milk or chocolate drink or cold juice or simply as it is.

well, my macaroni fruit salad is so simple to prepare and nothing special about it. i just combined a cup of cooked macaroni with a 500gm. fruit cocktail, a bottle of kaong and a bottle nata de coco (everything should be well drained. i reserved the syrup of the fruit cocktail for later use.) then i added diced cheddar cheese. then i added 4 tbsp. cream, 4 tbsp. mayonnaise and 1 tbsp. condensed milk. just mixed everything together and chill before serving.

fruit salad


yesterday i made fruit salad. this is for k since he's been dieting now. he told me that he just wanted to eat salad everynight and it's also nice to have salad within reach everytime we wnated some healthy snacks throughout the day. i tried my salad with cornflakes and it was good as well.

still simple to prepare with all the ingredients readily available and accessible at the supermarket: i drained well 3 small cans of fruit cocktail and 2 bottles of nata de coco; and set them aside. then i mixed 4 tbsp. of cream and 1 tbsp. of condensed milk (if you like it more sweeter, you can add 1 tbsp. more). then i combined the fruit cocktail, nata de coco and the cream-milk mixture together in a bowl. sprinkled with some grated cheese and chill before serving.

yes... really simple. :P

kangkong salad


k bought a bunch of kangkong from the souk last weekend. some i used to cook adobong kangkong, some for the fish, and now for the salad. this is so easy to make and very nutritious. kim even planted some of the stalks since he liked kangkong so much and kangkong grows easily.

ingredients:
2 handfuls kangkong leaves, stalk not included
1 tomato, seeded and sliced
1/2 onion, sliced
1 thumb-sized ginger, sliced
2 tbsp. lemon juice
2 tbsp. vinegar¹
1 tsp. sugar
salt and pepper

procedure:
wash the kangkong leaves thoroughly. blanch the kangkong leaves in boiling water. drain and set aside.

in a small bowl, combine the vinegar, lemon juice, sugar, salt and pepper. taste according to your preference.

in another bowl, toss together the blanched kangkong leaves, tomato, onion and ginger. then pour the vinegar-lemon mixture over and toss again to combine.

serve.

note:
you can also put a little patis if you likebut since kim doesn't like patis, i omitted it.

¹ as for the vinegar, tuba vinegar is much better to use. but you can also use the white vinegar which i used since it is the only available at the moment. you can also use apple cider vinegar.
