hash browns

today's friday, weekend here in uae but my refrigerator's still empty. we were not able to go to grocery last night after kim's work since he was not feeling well... he feels feverish up until now.

so there i was in the kitchen wondering what to prepare for breakfast. i saw 1 potato, 1/2 carrot and a little cabbage remaining. hmmmm... i found instant noodles also. since kim;s feeling sick, i prepared instant noodles with cabbage, carrots and egg. as for the potato, i made hash brown.


this recipe serves 2-3 persons.

ingredients:
1 large potato, peeled and shreded
salt and pepper
2 tbsp. breadcrumbs
3 tbsp. oil

procedure:
squeezed the shreded potato using a cloth or paper towel with it's juices. this will not make the potato mushy and the hash brown crispy.

season with salt and pepper.

mix the breadcrumbs well with the seasoned potato.

heat the oil in a pan, then put a tablespoonful of the shreded potato and spread them out in the pan. cook until golden brown on both sides.

drain on paper towel.
