pork in black bean sauce

kim and i bought this book "cooking class chinese cookbook" at carrefour months ago. since then we haven't tried any of the dishes... not until last month. even if makuy was sick, i still managed to prepare this dish. i just didn't follow the exact recipe though since i have limited supply. hehehe... i only used what's available in my kitchen.

i used vegetable cooking oil instead of peanut oil, white vinegar for dry sherry and cornstarch for cornflour. as for the sesame oil, i just omitted it since i don't have anything to substitute for it... hahaha... i cooked my pork until the sauces are almost evaporated, leaving some sauce just to wet the rice a little bit. i do not want my bean sprout overcooked, i always want the crunchiness still there. well, even if i lacked or substituted some of the ingredients, it still came out very good because kim loved it. it's already spicy but he still had this soy-hot sauce dip on side. whew... hot... hot... hot... hehehe... :))



ingredients:
1-1/2 tbsp. packed salted black beans
1 tbsp. vegetable oil
500 gm. pork fillets, sliced thickly
1 clove garlic, crushed
1 tsp. ginger, grated
1 tsp. hot sauce
1 tbsp. dark soy sauce
1 tbsp. oyster sauce
1 tsp. white vinegar
1 tsp. sugar
2 tsp. cornstarch
1 pc. pork cube, dissolved in
2/3 cup water

for the stir-fried onion & sprout:
1 medium onions, cut into wedges
2 tsp. vegetable oil
2 cups bean sprouts (toge)

directions:
rinse beans under cold water and drain. mash beans lightly with fork in a small bowl.

in a bowl, combine the hot sauce, soy sauce, oyster sauce, vinegar, sugar, cornstarch, pork cube and water, mix until well blended. set aside.

heat oil in a wok or large frying pan, fry pork in batches until browned al over. set aside.

using the same wok or frying pan, add the beans, garlic and ginger. stir-fry until fragrant.

add the combined sauces, stir-fry until the sauce boils and thickens slightly.

add pork and stir-fry until pork is cooked as desired.

served over stir-fried onion and sprout.

stir-fried onion and sprout: heat oil in a pan; stir-fry onion until just tender. toss in bean sprout and cook for about 2 minutes or until a little bit soft but still fim.
