got interested with this candied orange peel i saw in the magazine. since we always have oranges at home (mandarin, navel, etc.) i started searching the net for recipe and i found this. it tasted similar to the sugar-coated gummies makuy buy at the mall but mine was a little bitter. maybe because i wasn't able to remove all the pith from the peel. and it was not translucent enough, this, i should have boiled it a little longer with the sugar and water.
ingredients:
6 medium oranges
1 tbsp. salt
2 cups sugar
procedure:
cut peel of orange in sixths; loosen from pulp with spoon and remove most pith (white membrane) from peel. add salt and peel to 4 cups water and let stand overnight.
drain and rinse thoroughly.
in a pot, cover peels with cold water. heat to boiling and drain. repeat 3 times (this is to remove any bitter taste).
cut peel into strips. in a sauce pan, combine peel, sugar and 1/2 cup water. heat and stir until sugar dissolves. continue to cook until peel is transluscent. drain any liquid and roll peel in granulated sugar. allow to dry.

note: if desired, melt dark or bittersweet chocolate over double boiler and dip each dried strip in. refrigerate until chocolate is firm.
